WILD BLUEBERRY WAFFLES

Ingredients

WILD BLUEBERRY WAFFLES

  • 2-3 Bananas (Ideally very ripe)
  • A Handful of Blueberries (Based on how much you like!)
  • 2 Cups of Gluten Free Oats (This can be interchanged with regular oats)
  • 1/4 Cup Organic Honey
  • 1 TSP Baking Soda
  • 1 TSP Vanilla
  • 1/4 TSP Salt
  • 2 Eggs

Preparation

Blend the oats, baking soda, and salt until it becomes a smooth, flour-like substance. (I added some walnuts for texture and snuck some chia seeds and collagen into the mix!)

In a separate bowl mash the bananas until there are little to no chunks, add the 2 eggs, and honey. Combine in a bowl with the dry mixture until smooth.

I used a mini waffle maker and added more berries as I went—but this mixture can be made into pancakes, muffins, or waffles!
