Ingredients

SWEET & SPICY BLACKENED SNAPPER SALAD

Base: (*Base the amount on how much salad you intend to make, I did a scoop of each of them instead of measuring)

  • Mixed Greens/Arugula
  • 1 Block of Feta
  • Pumpkin Seeds
  • Dried Cherries
  • Watermelon
  • Seasoned Pistachios
  • Blackened Yellow Tail Snapper (Season to your liking, the spicier the better!)

Dressing:

  • 3 TBS Extra Virgin Olive Oil
  • 1 TSP Fresh Lemon Juice
  • 1/2 TSP Minced Garlic
  • A Dash of Salt and Pepper
  • Optional: Mix in 1 TSP of the spice you blackened your fish with for an extra kick

Preparation

Cook and season your fish to your liking. In my experience, the spicier you make the fish, the better the sweet watermelon taste mixes with it. I prefer it blackened, but you can prepare it in any way you like.

Prep your base ingredients—break down the feta, and slice the watermelon into chunks. Determine the desired amounts of all other base items you intend to add and add all base ingredients into a large mixing bowl.

To prepare your dressing mix all of the listed dressing ingredients in a container (I usually use a mason jar.) I eyeball the amounts and taste as I go.

*TIP don’t mix in the dressing unless you plan on eating it the same day. Store the salad and dressing separately to avoid it getting soggy, pour your desired amount of dressing on top of your salad when you are ready to eat it!
