Ingredients
Base:
- 2-3 Bell Peppers (My favorites are the orange & yellow ones)
- 2-3 Jalapeños (Add more for an extra kick)
- 1/2 Red Onion
- 1 Cucumber
- 1 Can of Corn
- 1 Can of Chickpeas
- 1 Can of Beans (Of your choosing! I like Kidney & Black)
- 1 Block of Feta (Optional)
Dressing:
- 1/3 Cup Extra Virgin Olive Oil
- Juice of 3 Limes
- 2 TBSP of White Wine Vinegar
- 1/2 of a Packet of Taco Seasoning (Of your choosing!)
- A squeeze of Hot Honey (OR regular)
- A Dash of Salt, Pepper, & Garlic Powder
Preparation
De-seed the bell peppers and jalapeños, then finely slice the bell peppers, jalapeños, red onion, and cucumbers. Drain and rinse the corn, chickpeas, and beans. Add all ingredients into a large mixing bowl. Refrain from mixing until the dressing is added (this will prevent it from getting mushy.)
Next, add all dressing contents: extra virgin olive oil, juice of 3 limes, white wine vinegar, taco seasoning, salt, pepper, garlic powder, and hot honey.
Break the block of feta down and sprinkle the contents into the large mixing bowl as well.
Mix well and enjoy! Perfect for a boat day or summer gathering.
